Although born and bred in Boston, Massachusetts; Michael has enjoyed living in Western Massachusetts for the last fifteen years. With a background in theatre, which took him on national tours in his twenties, and completing his MBA in Entrepreneurial Thinking and Innovative Process in his thirties, Michael was born for the restaurant business. Inherently and inexplicably the hospitality industry requires business acumen, vision, leadership, and showmanship. Michael spent nearly a decade with the Spoleto restaurant group, leading the way to unprecedented growth and fueling his desire to achieve his own unique vision.
Michael has served the community by volunteering for the National Alliance for the Mentally Ill, the Human Rights Campaign, Bay State Children’s Hospital, Equal Rights Campaign, and The United Way. In addition he has served on boards for both the ERC5 and Aditus, Inc., a non-profit school and residential facility for people with Autism Spectrum Disorder.
Michael believes there is a “lost art of dining”. Center Square Grill is an opportunity re-embrace this lost art. Michael wants his patrons to embrace his philosophy as well:

Bill Collins grew up on Long Island, and from a young age was always involved in the restaurant business. He began working in his family’s hotel and restaurant than moved on to working for various corporate concepts at the management level. 15 Years ago Bill moved to Western Massachusetts to be close to family and began working for the Spoleto restaurant Group. He finished his tenure with the group as the Chief Operating Officer.
In 2008, Bill was awarded the prestigious Business West “40 under 40 award”. He has been a Major supporter of the Food Bank of Western Massachusetts and he is also one of the founders of the Northampton Jazz Festival. Bill has trained privately with Chefs at Cetli in Tulum, Mexico and has taken classes on wine blending at Lenz Vineyard on Long Island. In addition, he continues to be as active as possible with local non-profits that benefit the community. Bill has an unlimited passion for wine, food and the restaurant business. From a young age Bill has wanted to open his own restaurant, and proudly after his time with the Spoleto Group and being mentored by Restaurateur Claudio Guerra he is embarking on that journey with another long time Spoleto group manager Michael Sakey.Less
